Sunday Schmooze Savouries Sweets and Scrabble

Hello Nelly Belliers!

Where did the weekend go? I can't believe it is Sunday already!
We had a quiet weekend, but we did go to the gym yesterday and we will be going again today. I have to say that even though it always feels like a bit of struggle for the first month or two back, it felt really good to workout and my body definitely said "thank you". Chris has been back at it longer than me, but we have both decided that it is time to get healthy, strong, and fit. If anyone has any healthy snack or meal recipes, or if anyone has a favourite exercise move, let me know in the comments area below!

The other highlight for me was meeting our financial fella! He was a hoot and I now want to hang out with him. He also thought that I was a certain celebrity when I first walked in (click here to find out who). She's the only celebrity that I have ever been compared to. Isn't it so nice when you are doing something in life and you randomly meet someone who's really fun and hilarious. Don't worry Chris thought the same thing, so this isn't remotely inappropriate ;) !

SCHMOOZE

Going back to one of my week-end highlights, I wanted to talk a bit about body image, and feeling good about yourself.

First of all don't let anyone ever make you feel less than beautiful! Beauty comes in all different shapes and sizes, and the best thing that you can do in life is to learn to love yourself. Be proud of who you are, stand tall, and strut your stuff!

On the other side of the coin is your health. If you want or need to get healthy, then definitely go for it! Just like we need to keep our brains strong, we also need to keep our hearts and bodies strong too. This means eating well and doing some type of exercise. 
Here are a few facts for you:

  • Body fat around the waist is very dangerous to your heart, more than your hips and thighs. 
  • Physical activity stimulates various brain chemicals that may leave you feeling happier and more relaxed. 
  • Exercise and physical activity deliver oxygen and nutrients to your tissues and help your cardiovascular system work more efficiently. And when your heart and lungs work more efficiently, you have more energy to go about your daily chores.
  • If you want to know what your weight should be based upon your height, age, and gender then here is a great calculator. Please note that this is just a suggestion and you should always talk to your doctor about weight and health concerns.

Being healthy also means that you need to get regular check ups and you need to go to the doctor if something isn't right with your body. It really frustrates me when people refuse to go to the doctor when something is wrong, or when I hear that they haven't been to the doctor in years. The overwhelming proof is out there now that catching things early can save your life! I know it can be scary, but imagine if a doctor said "if you had come earlier, your prognosis would be better". Think about how your health decisions can also affect your family and friends. Please don't let the fear win. I am going for my yearly checkup this week, and would love to hear that you have booked yours or have one as well. Let's fight fear together!

Being healthy doesn't mean that you should cut out all of the things that you love to eat in life. I recommend having a treat day once a week, or maybe two depending on your situation. You don't want to cut out everything good in life, or you will go crazy! Also focus on finding healthy delicious recipes. There are LOTS of them out there, and the majority of them taste just as good as recipes with twice the amount of fat, etc. Try to focus on eating foods like fish, fruits, vegetables, beans, high-fiber grains, and olive oils rich with monounsaturated fats, fiber, and omega-3 fatty acids.

For those of you who are young, I wanted to share something personal with you in hopes that my story can help in any way. At the end of high school I struggled with my weight and with my self-esteem, and I became bulimic. My bulimia carried on into University, and it wasn't until I told my mum that I was able to deal with it. It didn't matter how many people told me "your beautiful", I didn't feel that way, and I needed to figure out why. From the outside it looked like I had it all, a great family, a great group of friends, and a safe place to lay my head at night, but on the inside I was crumbling. There is so much pressure on girls and women, and I just want you to know that you are beautiful! If you aren't feeling that way, and if you are going through something similar then PLEASE tell someone and get help. I also think that it's super important to talk about these things openly, because the more that we discuss serious topics, the more open and free people can feel. We shouldn't feel ashamed to talk about how we are feeling or what we are going through, and we need to support one another through tough times. If one person gets help because they have read this then I am over the moon, but regardless I think it's an important topic to talk about, and I have said from day one that my blog was also going to be a place of honesty and truth. I would also like to say that eating disorders affect all genders and all ages, I'm just relating to my story of what it was like as young girl growing up. So it doesn't matter who are, you are ALL worthy of feeling amazingly fabulous because you are amazingly fabulous!

SAVOURIES

Sort a strange thing to follow with, but it's important that we learn to love food and learn to talk about it in positive ways. So on to savouries, one of my deepest loves.


My sausage roll puff pastry quest will be put on hold until a 'treat' day type dealio, but I am in search of some healthy savoury delights, because completely cutting out everything is not realistic. Also, who wants a life without savouries? Not me! 

I have more of a savoury than sweet tooth, so I definitely need to find some salty little snacks that I can make myself. One way to definitely cut back on calories, fat, and things that your body doesn't need is to make things yourself. For example, make your own salsa, don't buy it. That way you know exactly what you are eating, and you know that everything in it is fresh as daisies.

Here is a great home-made salsa recipe from Weight Watchers UK (click here). It's easy, quick, and delicious!

It's also really easy to make your own pita chips which will go perfectly with your salsa. Find some whole wheat store-bought pitas, sprinkle them with a bit of olive oil, and then sprinkle them with some fennel seeds. Bake them in the oven until golden and crisp. Alternatively, you can also make your own pitas (here is a healthy recipe in case you want to make your own).


SWEETS

Even though my palette prefers savouries, it's always a good idea to have some healthy sweet ideas on hand just in case. One snack that I really enjoy, and that we've all probably had, is fruit and yogurt. I know this pretty obvious but I think sometimes we are so focused on chocolate bars that we forget how sweetiful (yes I made this word up) fruit and yogurt can be!

Fruit and yogurt 

If you have 1 small apple, slice it (I love those apple cutters that you can get, click here to see what I'm talking about), chuck the apple slices in with 1/2 cup of nonfat plain yogurt and sprinkle it with 1/4 tsp cinnamon. If you don't like cinnamon (like my mum) then just leave that part out. However a study done by the USDA says that "a sprinkle of cinnamon may boost weight loss. The polyphenols in cinnamon helps to regulate blood sugar, which can keep hunger pangs at bay".

SCRABBLE

For those of you who love Scrabble like me, or if you just love learning new words, then this little biddy is for you. FRIDAYS: Congratulations to those of you who made it through your first week back to work / school / etc! Once today is over it's time to relax and enjoy the weekend. What is everyone up to this weekend? 

I MUST get to the gym this weekend because it's time to get super healthy. I am still a bit sick, but I plan on kicking this bug to the curb for good. 

I think the best part of this week for me was a celebrity sighting. I saw David Sutcliffe walking down the street. I have to say that he looks even better in person (and he had some great scruff going on)!

1st EPISODE THOUGHTS 

VICTORIA'S THOUGHTS (ME)
  • So, I already have my favourite bachelorette. I really like Renee! She is a single mum, athletic (like Juan Pablo), and seems very down to earth, so far. Fingers crossed that my instincts are right on this one. 
  • Andi (the prosecutor) seems a bit too tough for me, like she has a few walls up!
  • I can't remember her name, but she got voted off and she is a massage therapist. I'm glad she got voted off, because boy did she seem a bit "off" and the things that she said really didn't make any sense. For instance, she said that the men she has dated didn't like massages. Come on! Who doesn't like massages, especially from someone who's trained to give them? My guess is that they just didn't like them from her, because she was creeping them out while giving them!
  • Nikki (paediatric nurse) seems very down to earth, girl next door, young, and normal. I also like her. 
  • Lauren H. Wayyyyyyy too soon to be dating and definitely way to soon to be on The Bachelor! Harsh break-up story, and I feel sorry for her but she definitely needs more time to deal with her past. I wrote those thoughts before he voted her off, so I think Juan and I are on the same thought train on this one. :)
  • Valerie seems very competitive, and I think she's going to cause a lot of trouble for the other girls. She also said that she's pretty! You don't need to say your pretty if you're pretty, no no no (My thoughts before she got voted off. Again Juan Pablo and I are on the same page!).
  • Lacy seems very sweet, caring, and down to earth (sadly she got voted off).
  • Clare (32, part Mexican, father sadly died of brain cancer and made DVD for her future husband). First off, let me say that I definitely teared up when I heard her talking about her dad, and I can't imagine going through that. However... I'm not sure that she's the right girl from Juan. Something just didn't feel right to me.
  • And last but not least... VICTORIA. Now you would think I would love her, just because I get to hear Juan Pablo say my name. That tiny moment was nice, BUT there can only be Juan Victoria! hehe

SISTA K's THOUGHTS

  • Kat...Kylie...ouch! 
  • Crying girl told him that because she was going to be a stepmother to someones child, that meant she was a match with him...could see him shrinking in his chair!!

FOOD: I have made three delicious meals this past week, that I definitely want to share with you. I am going to make a vlog or two for a couple of them, but here is my 'Nelly Bellie Easy Peasy Chicken Taco' recipe. This is a great recipe if you come home from work or school and you don't feel like cooking. It's fast, easy, and delicious!

INGREDIENTS

  • 1 lb ground chicken (I like to use chicken but you can use any meat that you like)
  • 1 onion
  • 3 cloves of garlic
  • 3 large tomatoes (or 6 smaller tomatoes)
  • Tomato Paste (about 1 tablespoon)
  • Taco seasoning (you can also make your own - healthier but more time consuming)
  • Cheddar cheese
  • Low Fat Sour Cream
  • 1 Avocado
  • Handful of Cilantro
  • 1 Cup of Iceberg Lettuce
  • Olive oil (about 1 tablespoon)
  • Hard taco shells (most boxes come with about 10 to 12)

INSTRUCTIONS

Heat frying pan, and then add olive oil. Add chopped onion, and finely chopped or grated garlic to pan. Cook until golden brown but not burnt.

Add ground chicken and taco seasoning. If you are using package taco seasoning, I like to use about half of what they recommend. I find it far too salty otherwise. Also, add tomato paste. Mix it all together in the pan.

In between mixing and stirring your meat, grate your cheese, and chop your tomatoes, cilantro, and lettuce. Turn your avocado into a nice guacamole, and add about half of the chopped tomatoes, and all of the cilantro to your guacamole.

Once your meat is thoroughly cooked, add a few of the chopped tomatoes to the meat, so that they get nice and warm (I always recommend a quick taste sample here. Add a bit more tomato paste, or seasoning if needed).

Now you're ready to eat. Grab a taco shell, add some of the meat mixture, top with a bit of cheddar cheese (so it melts in), add a bit of iceberg lettuce, and top with the guacamole and sour cream (and add a bit more grated cheese if you're a cheesaholic like me). Or build your taco how you like it! Bon Appétit!

FASHION: I thought it would be fun to showcase some Canadian fashion this week! I don't think we get enough recognition, and we have some amazing talent in this country! These are a few of my favourite designers this week:
  • Jason Matlo is a Vancouver based fashion designer, and I really wanted to share his work with you. I love looking at Spring / Summer 2014 collections when the weather is cold and dull (it's nice to dream of sunshine and warmer temperatures). I have to say Jason has some amazing designs, and I am really loving #03 on this page (click here). I love bright, fun clothing, and I think he has done a great job at complementing his choice of colours. I would love to own this piece!
  • Joeffer Caoc is a Toronto based fashion designer, and while his Spring / Summer 2014 collection is not up yet, I am really loving the simplicity, yet edginess to his pieces. Take a look at his Autumn 2013 collection and see for yourself.
  • If you are looking for a unique and stunning wedding dress, I highly recommend looking at Anya Dionne's website. Anya Dionne is based in Calgary and her website says that it takes about 3 months to get your dress completed. Take a look at her "Couture Gallery 2014" link. I am absolutely in love with her dresses.

FUR-DAUGHTER: Nelly Bellie has managed to destroy all of her Christmas toys, however it's really not her fault since they all seem to be so poorly made! I got her two more toys (three dollars each from HomeSense), but this time I made sure that they didn't look like stuffed animals. I highly recommend sticking to kong's, tug ropes, and the other more durable looking toys. They aren't as cutsie, but they last a whole lot longer! If you guys know of any good toys (that don't break the bank) let me know! 

I also found a great little red waterproof dog coat type thingamabob. I refuse to pay forty dollars for a dog coat, so I kept checking HomeSense and finally found one for $12.99 by OutBack Jack (they are regularly $20 plus tax). The great thing about this jacket (click here to see their website) is that it has adjustable Velcro straps. Perfect for Nelly Bellie since she is still growing. We have also been experiencing -40C weather (no exaggeration) so it was perfect timing! We are back up to plus 1 today though, so hopefully that cold snap is over!

Sunday Schmooze Savouries Sweets and Scrabble

Hello Nelly Belliers!

I hope you are all having a relaxing Sunday before returning to real life tomorrow. Sometimes Sunday's can be a bit gloomy, as Monday is not far behind, so I thought it would be fun to do a 'Sunday Schmooze Savouries Sweets and Scrabble' post.

Schmooze

I have noticed a few comments floating around the world of YouTube that are quite negative and nasty (not on my channel, but on YouTubers that I follow). Some are directed at the person making the videos, but some comments are directed at their partners, etc. 

I would just like to say that words said online can be just as hurtful and harmful as those said in person. So let's try to spread more love and kindness this year. 

I think we should all take a minute to think about our initial reaction to something, and really ask why something might be the way it is (this also pertains to the non-online world as well). For instance, just because someone chooses to blog and vlog it doesn't necessarily mean that their boyfriend or girlfriend, partner, etc wants to be on camera or included. My boyfriend hates being on camera but at times he has no choice depending on what I'm shooting, or at times he will be on camera here or there for me (he's the best).

I remember when my dad got a video camera (wayyyyyyyy wayyyyyy back, the really big clunker kind that took those huge tapes) and my mum would always say "don't point that thing at me". Now imagine that scenario but shared with the world.

So if you see someone who doesn't look too happy on a vlog, remember that they are an innocent bystander. They are being more than kind just being on the videos! Imagine if your partner was a dentist, and you had to go to work with them every day (ok that is my own personal nightmare).

Savouries

As some of you may know, I have a slight addiction to sausage rolls. My addiction started pretty much from the moment I entered the world, and when I was in school my mum would make me homemade sausage rolls to take for my lunch (yes I was spoilt, go mum!). My friends would try to 'trade' their food with me, but they had nothing that could come close to my little piggies in their blankets, so I always gobbled them up. 

Over the holidays I made sausage rolls twice. The first time I made them with store bought puff pastry, but I just can't eat that stuff any more. Not only is it not fair on the sausage, but it actually makes me sick (and my mum would be appalled). 

So for the second round I thought I would try Gordon Ramsey's Rough-puff Pastry recipe (click here to try it out). Let's face it, we all need a little Gordo in our life, and using his recipe gives you a good reason to swear in the kitchen. These little guys turned out great, but I have to say "holy butter batman". Now, I do have a sensitive stomach, but even Chris went in to a butter coma. If you make these I would definitely try to cut back on the butter (if possible, you might have to play around), or maybe you could substitute here or there for something else. Or if you make as is, then only eat two in one sitting. Is that even possible?

Once I find the perfect puff pastry recipe, I will share it with you (probably in vlog format).

Sweets

Since today is the last day of the holidays, I thought it would be nice to make something different for breakfast (we have been eating Weetabix pretty much every morning up until today). 

Chris and I weren't very hungry this morning, so I ended up making us a brunch treat. I used to make Jamie Oliver's pancakes back in New Zealand all the time, and for some reason I forgot about them. Today I had a new twitter follower from kiwiland which triggered this delicious memory.

I highly recommend these pancakes. They are light, fluffy and ‘lovely jubbly’! I incorporated grated apple and small slices of apple into ours, but I have to say the flavour didn't stand out. I would recommend using blueberries, bananas, or my personal favourite raspberries! Jamie uses pears in his recipe, but they would definitely need to be the really tasty kind in order to stand out. A Look Back at 2013 - Nelly Bellie

Hello Nelly Belliers!

Happy Saturday everyone! What have you got planned for the week-end? As some of you may know I am still sick, this bug just won't bug off (bad Saturday joke for you). Since I am still ill and since the weather has turned VERY cold (yesterday felt like -20 degrees Celsius! Yowzers!), I think we will just stay home where it nice and warm and have a bit of a movie marathon (Chris is currently having a football (soccer) marathon. Nelly decided this morning that my bra would make a great toy. I think she is having a naughty marathon!

I thought it would be quite fun to look back at 2013 and share some of my highlights for the year. It's a great way for me to remember all of my adventures and I get to create a mini time capsule of sorts!

JANUARY

2 major life changing things happened this month...

The first major thing was that Chris and I moved in together at the very end of January! I moved in to his place, and it was a major decision. I have only lived with one other boyfriend, so I don't make this decision lightly. I knew it was the right thing to do though because Chris is amazing, and we both wanted to move our relationship to the next level. I personally don't think there are any rules for 'moving in'; every situation is unique and different. Your friends and family may have their opinions, but at the end of the day, you need to do what is right for you and your partner, not them. Listen to your gut!

The second major thing was that I resigned from my Marketing / Communications job. After working crazy days (sometimes 9am to 3am and then starting again at 9am), never seeing anyone, running my body into the ground, I decided that it was time for a major change career wise (I had been working in Marketing for over 8 years). I gave notice and I signed up to return to University. It was a huge step and I felt amazing! It was as if a huge weight had lifted off of me. If you're not happy with your job, I recommend making a plan to change things. I'm definitely not saying that you should just quit your job (I am extremely lucky to have Chris' support), but eventually with the right plan you can do anything that you want! Life is short, so grab it by the horns and pull!












FEBRUARY

Chris and I had our very first Valentine's Day together this month. I remember thinking how lucky I was to have found someone so amazing, and how happy I was that I had found my perfect man. He's a keeper!

This was also a great month for concerts!

Concert #1: Chris, my brother, my brother's wife, and I all went to the Bon Jovi concert this month (don't make fun). We had random seats behind the stage, which wasn't an issue for the most part because he would turn and sing in all directions.

Concert #2: Then my brother's wife and I went to see Maroon 5. I got to see my second husband Adam Levine, and we had a blast singing and dancing.

I also had a lot of visits with babies this month. I got to hang out with two friends and their little ones on separate occasions, which was so nice because I don't get to see them very often due to lack of time, or life getting in the way.












MARCH

This month we had a very special guest stay with us. Nelly Bellie's fur Uncle,
Uncle Alfie. Alfie stayed with us for about a week I think, because we wanted to see how life would be with a dog around full-time. I highly recommend doing this if you are thinking of getting a puppy or dog. It's a great test, and if it doesn't work out, that's ok, you can always just be a dog sitter from time to time.

Who doesn't like surprise flowers? Chris brought me home a lovely bunch of flowers this month, just because. A definite highlight for me!












APRIL

April was a great month because Chris and I flew to
Vancouver. It was the first time he met my parents, my sister and her husband, and my niece and nephew. It was also the first time he met a bunch of my west coast friends including my bezzie mate Amanda. My parents and I also got to meet Chris' aunt and uncle and their kids and grandchildren. Not only did we have amazing family bonding time, but we also got to see lots of the beautiful scenic sights that I miss so much (I lived in Vancouver for about 9 years). Everyone loved Chris (how could you not), which is always a bonus. 

I also got my first pair of glasses this month. I had been in denial for a while that distances were starting to get a bit blurry, so I bit the bullet when I saw that ClearlyContacts were going to give me my first pair of glasses for free! Who doesn't love free stuff?











MAY

School starts for Summer. School starts forever. I started my new journey of being an elementary school teacher in May, with my first round of full-time classes. I was definitely nervous (it's been a long time since I've been in University!), but I soon got in to the swing of things.

Lovely Laura also moved back to Canada this month from Ireland. Even though I haven't got to see her a lot this year (due to school craziness, etc) it's so nice having her back. She is one of my closest friends, she always puts a smile on my face, and she has been there for me a lot. We actually met in New Zealand and then randomly ended up moving to Canada at the same time! That is friendship fate if you ask me!











JUNE

This month
Chris and I decided that we definitely wanted to get a Westie puppy. After doing lots of research we found the perfect place and they had a new litter! We went for our first visit this month, and while we aren't exactly sure which puppy is Nelly Bellie (as they all look like tiny polar bears), I feel that the one I ended up holding had to be her!

Chris and I also celebrated his birthday this month at our favourite restaurant! We actually had our second date there, and we always go back for special occasions.













JULY

July 26, 2013 was the day that we brought Nelly Bellie home! She was shaking like a leaf and very quiet when we first got her, boy did that change fast! We were so happy to finally have her, and slowly our family began to grow.












AUGUST

This month was great because I got to see
my Sista, her hubby, and my niece and nephew. They came out this way for a bit of a vacation, and even though I didn't get to spend a lot of time with them (I had final exams) it still meant the world to see them! I miss them a lot!

I had 5 final exams this month! Ouch! I did pretty well, especially considering it was my first semester back at school. It might have been because of the blueberries I ate. My mum and dad watched a British documentary that basically proved that if you eat blueberries at least 3 hours before your exams, that you will get a higher mark. Give it a go! A Nelly Bellie family tip right here!

Once my final exams were done we packed Nelly Bellie and all our camping gear up in the truck and headed out on a major east coast road trip. Went to New Brunswick, Nova Scotia (including Cape Breton Island),  and Quebec. Initially, we met up with my brother and his wife (they happened to be out that way that the same time). Such good luck! After we left them we made our way to the very top of beautiful Cape Breton Island and stayed at the most gorgeous campsite in the world. We were literally camping on a cliff, overlooking the ocean. We could hear the waves crashing on the rocks, and in the morning we got to hear a pod of whales travelling by. It was truly magical! The entire trip was so much fun, and we definitely saw some of the most amazing scenery that I have ever seen in my life (and that's pretty big considering I lived in New Zealand). We ate seafood galore, and Nelly Bellie was so good in the truck (which is a miracle because she now gets car sick every time we travel). She loved camping because she got to meet lots of new dogs and puppies. We had a blast and I will never forget that trip!












SEPTEMBER

A HUGE highlight this month, was our
1-year anniversary. I feel like I have known Chris my whole life. He is my best friend, and I am so lucky to have him. He treats me like a Princess, and we have so much fun together. I always thought I knew what love was, but I know now that I hadn't truly been in love before I met him.

A new semester of school also started for me in September. I was quite excited because all of my courses were Education courses (I am going to be an elementary school teacher). However, I was a bit apprehensive about my law class, but I ended up getting amazing marks. Maybe I should be a lawyer?






















OCTOBER

I turned 3# this month :) and was very spoilt by Chris. He got me a Samsung Galaxy 3 tablet, and I use it every day! He also arranged a nice dinner with my brother, his wife, and some of our friends. We ate amazing food at an awesome gastro pub, and I found out that my sister-in-law was taking me to see Pink! Yeah baby! My nephew has the same birthday as me (minus the year of course) which always makes my birthday extra special. How cool is that?!












NOVEMBER

I started my blog on
November 25, 2013 (click here for my very first blog post). I have to say that it feels a lot longer than that (in a great way). I am having so much fun blogging and vlogging and I look forward to doing this for years to come! I have picked two of my favourite blog posts. I really enjoyed doing my 'Tuesday's Treats & Truths' post where I answered 50 fun questions, and I also enjoyed posting my 'Fridays : Finals : Food : Festivities : Fashion : Fur-daughter' posts.

We welcomed our new niece Grace this month. She is so adorable, and I am looking forward to spoiling her.

Nelly Bellie celebrated her birthday this month. She turned 6 months. If she was 18 months it wouldn't be a big deal, but half way to 1 comes with some major changes in the world of puppies. The most major change was that she got spayed this month. Poor Nelly Bellie. She hated wearing her cone, but everything went well and her stitches have healed nicely.

Nelly also met her new fur-cousin Betty this month and she got a taste of her own medicine. She always loves to bug her fur-aunt and fur-uncle (who are both Westies) so she wasn't used to a younger pup chasing her around non-stop. She got a tad annoyed to put it lightly.












DECEMBER

This month I got taken to see
Pink by my sister-in-law, and it was ah-may-zing. Boy, does she put on a great show! She was literally somersaulting through the air while singing.

I had another round of final exams this month and rocked them! My final grades were 82, 92, 93, and 96. My best marks ever and I am proud. :)

We hosted our annual Ugly Christmas Sweater Party before Christmas and it was tons of fun. I won't repeat myself, so here is my blog about that, click here.

Chris and I also went to his work Christmas party this month, and I met some new awesome friends. Again, I won't regurgitate but I held a vote for what dress I should wear that night. Here is the video showing the options, and here is the result.

Chris and I spent our second Christmas together, but it was our first Christmas with Nelly Bellie. We have decided that Christmas Eve and Christmas morning we are going to start our own family tradition, but after the morning is done, it's family time. After all, that's what Christmas is all about!
